Green chile and cheese (or rajas con queso) is a traditional filling for tamales. In our version, we use deliciously creamy cheese from Spring Hill Cheese in Petaluma and sliced jalapeño peppers. We remove seeds and membranes—the spiciest part—from the jalapeños we use, so these tamales have a great chile flavor but only a mild heat. We make our tamales in the traditional way, and our masa is always perfectly moist, and in just the right ratio to the filling.
We recommend topping these tamales with our Roasted Tomatillo Salsa. The tanginess of the roasted tomatillo goes well with these creamy, cheesy tamales. If you like things a little spicier, try them with our Roasted Tomato Salsa.
Our tamales are vegetarian, gluten-free, non-GMO and certified organic. To keep our tamales free from pesticides and GMOs, we use food-grade paper wrappers. Our tamales will arrive frozen and keep for up to one year in the freezer.
